Our story

Montfox began with a simple idea: to plant a vineyard and create something lasting. What started as a vision for Welsh sparkling wine has gradually evolved into a wider estate project, shaped not only by vines but by the land around them. Alongside the vineyard, Montfox is becoming a place for beekeeping, food growing and the stewardship of water and wildlife. The estate remains at the beginning of its journey.

The vines are young, the plans are still unfolding and many of the most exciting chapters lie ahead. But that is part of the story. Great vineyards are measured in years rather than months, and Montfox is being built with the long view in mind.

At the moment, every season brings something new: establishing the vineyard, caring for the bees, improving the landscape and learning from the land itself. The aim is not simply to produce wine and honey, but to create a place that reflects the character of North Wales and rewards patience over time.

Wine - Food - Water - Wildlife

Montfox is being shaped around four connected elements: wine, food, water and wildlife. Together they provide a framework for the estate and guide its long-term development.

Wine:
The vineyard sits at the heart of Montfox. Newly planted vines mark the beginning of a journey towards Welsh sparkling wine, with every season helping to shape the wines that will one day be produced here.

Food: Beyond the vineyard, the estate is intended to be productive in a broader sense. Food growing forms part of the vision for Montfox, creating another connection between the land, the seasons and those who enjoy its produce.

Water: Water plays an important role in the landscape of the estate. Lakes, drainage, rainfall and natural water systems all influence how the land functions and develops over time.

Wildlife: The estate is shared with a wide variety of wildlife, from pollinators and birds to the many species that depend on healthy habitats. Through thoughtful management, Montfox aims to remain a place where nature can thrive alongside productive agriculture.

Looking ahead

Montfox remains at the beginning of its journey, but the vision for the future is clear.

At the heart of that vision is the vineyard itself. As the vines mature, the goal is to produce our own Welsh sparkling wine under the Draigseco™ name, creating wines that reflect both the character of the land and the patience required to cultivate it.

Alongside the vineyard, we hope to expand Fox & Hive and grow the apiary into a thriving part of the estate. Additional hives will support both honey production and the wider landscape, contributing to a healthy and diverse environment for pollinators and wildlife.

Looking further ahead, we hope Montfox will become a destination that people seek out and enjoy. A place where visitors can experience the vineyard, learn about beekeeping, enjoy tastings, take part in workshops and follow the story of the estate as it continues to evolve.

While many of these ambitions remain years away, every season brings us one step closer. For now, the focus is on establishing the vineyard, caring for the land and laying the foundations for everything that follows.
